This full-bodied seasonally released Fall Draft sake has unique nose filled with rice, grains, caramel, earth tones, and leather. "Hiyaoroshi" sake is a style of sake that is pasteurized once then aged for six months to allow for more richness and deeper flavors. Misty Bay does not disappoint. This seasonally released "draft" sake is called "Hiyaoroshi," which means it was pasteurized once then aged for six months and released to go with Fall and Winter cuisines. The nose on this demon slayer is a collection of grains, toasted rice, straw, and toffee elements. With more body than in year's past this brew drinks round, semi-thick, and rich with a tingle of acidity that brings forth a dryness that is bright and crisp. A host of flavors including cinnamon toast, raisins, short bread and butter cookies abound. A smaller cup brings forth more rich sweetness and a larger vessel gets the acidity play that highlights a minerality. Serve chilled but also enjoy at room temp.
