Because it is made in Kyoto, which is known for soft water sakes - brew that speaks to those who like clean and dry sakes that have a neutral flavor that harkens rice and dryness. I like this brew a lot because it is so unassuming and smooth. My word for this baby is "Dry Water" and you will understand why. The Yamamoto brewery was founded in 1677 and we sell their Mizunoshirable Ginjo as well. Behold a very drinkable Junmai Daiginjo that will open your sake horizons to a brew that stands away from the fruity pack. Clean, smooth, dry and you!
