Chiyomusubi "Goriki"

True Sake From Tottori Prefecture. Muroka Junmai Nama Genshu. SMV: +5 Acidity: 1.6

The nose on this powerful unpasteurized sake is a collection of steamed rice, cocoa, musky and dusty aromas, which speaks to the very unique rice used to make this special sake. "Goriki" is a very sound sake making rice varietal and the result is a solid, rich, round and dry freshly made brew. Don't go looking for bright fruit tones here, because this loaded nama has savory layers of steamed rice, umami, nougat, and a hint of cocoa flavors on a super smooth and slightly fat fluid. If you like masculine sakes that drink rich and full-bodied (Yes I'm talking to you big red wine drinkers) then this very velvety sake is right in your wheelhouse. Goriki is a unique drinking experience that does well chilled and even lightly warmed. True Sake From Gunma Prefecture. Junmai Ginjo. SMV: +8 Acidity: 1.4

The nose on this unique sake from Gunma is a collection of dates, powder sugar, cocoa and berry elements. This is a different Junmai Ginjo that drinks spritzy and extremely flavorful that speaks to crisp and zesty wine drinkers. Mild fruit tones of strawberry and melon dance on a semi-fat fluid that drinks bright and eventfully. A very important sake that takes newbies on a flavor treasure hunt and connoisseurs on feeling free for all. Seko "Ninja"

True Sake From Shiga Prefecture. Tokubetsu Junmai Genshu. SMV: +3 Acidity: 1.8

This is a very round and rich sake with a nose filled with rice, sweet nut, caramel and cocoa aromas. Smooth, semi-chewy, and slightly creamy this "Ninja" drinks rich and round with licks of cocoa, rice, and breakfast cereal elements. A small cup brings forth more flavor and better balance, whilst a larger cup makes the brew drink smoother, lighter and establishes the robust acidity level. A good three temperature sake that does best at room temp. WORD: Cocoa WINE: Deep reds/Smooth whites FOODS: Label says sushi, sashimi, tempura, and fried fare. $30 (720ml)
Suehiro "Denshou"

True Sake From Yamaguchi Prefecture. Yamahai Junmai. SMV: -0.5~+0.5 Acidity: 1.4~1.7

The nose on this superb "Yamahai"-style (traditionally made sake) is a gentle collection of rice, bread, and cocoa elements. Bingo! A great sake at a great price point for what it is! This is a terrific feel-good-in-the-mouth sake that is super smooth and super round with a gentle sweetness of tangy citrus and sweet rice. Talk about velvety - the fluid of this sake is soft and heavy. But that amazing feeling is perfectly matched with unique flavors. Have you ever wanted to drink a lemon cookie with powder sugar on top? This is a very solid introduction to a Yamahai sake that has many attributes of an old-school brew.
