Miyamanishiki is a brewing rice varietal--similar to a Cabernet or Chardonnay varietal in the wine world. "Tokubetsu" means special and the nose on this special Junmai is filled with cream, sweet nuts, steamed rice, lemon peel and white peach elements. This is a very soft and good feeling sake with many unique flavors on many levels, velvety and rich but not full-bodied. Smooth, round and fluffy look for flavors from sweet nuts and rice to unagi sauce, creme brulee, cinnamon, and white raisins. A gentle sweetness emerges as the fluid warms in the glass bringing forth more umami goodness. WORD: Soft WINE: Pinot Noir/Non Oaky whites BEER: Creamy Ales FOODS: Salty and savory fare, grilled meats, sushi, sashimi.
