The “Beau Zone Layer” – Mizunoshirabe “Sound of Water”

Say hello to one of the first brews in the True Sake portfolio! Why have we carried this Ginjo for 16 years? Because in a word it is amazing! In the beginning, we used this sake as a guide for a truly “soft” sake that is made in Kyoto and is made with very soft water. This is a benchmark brew to taste how soft and gentle a sake can be, and what low acidity does to the overall drinking experience. But then we realized, and trust me when I say that it was astounding, we discovered that this gentle Ginjo was a food-pairing beast! Huh? You bet! Don’t let the soft nuances fool you, it actually has a balance that is superb with meats, pastas, oily, salty, and savory flavors. And it’s still so darn drinkable. You might know this brewery, Yamamoto Honke, for their super popular Honjozo called Genbei (four eyes) or their Yuzu-shu called Yuzu Omoi. This brew is a great partner for True Sake, because with it’s creamy, dry, smoothness you get a look into soft Kyoto sake that we discovered covered all of the food pairing bases!
