Say hello to a “whisper sake.” What the hell is a whisper sake? Basically there is a style in making sake that results in super soft, super silky, and almost like water brews. This Ginjo made with Gohyakumangoku milled to 55% is a great example of super subtle sake that is actually pretty complex even though it drinks like flavored water. It is lush and silky with hints of pear, mango, peach, and ripe melon. And then it is gone! Where did all the flavors go? Where did the sake go? Gone! It’s like water and it’s awesome. This is a perfect sake to play the three glasses tasting game. Try the brew in three different sized glasses to see how the acidity affects the balance and delivery. A small cup puts forth more fruit tones. A wine glass makes this brew drink extremely like water, but the mid-sized glass gives the best feeling and flavor connection. Truly a wonderful introductory sake for those who are afraid of sake. It is also a wonder sake for those who know Nihonshu, because the subtle complexity is dazzling. Remember the movie “Like water for chocolate”? Well think “Like water for sake.”
