Beau-Zone Layer – Tenryo Hidahomare 'Pride of Hida'
Ha! This brewery is well known for using flower yeast for their sake production, but this brew doesn’t really drink all that flowery and sweet like some “hana” (flower) kobo (yeast) sakes do. This brew is made using the Hidahomare rice varietal, which is referred to as the pride of Hida. Rich and full, with a great fat mouth feel, this Ginjo has lots of Junmai characteristics and layers of flavors from cream and cocoa to vanilla and steamed rice. One of those “feel good” sakes it speaks to those who like body and velvety soft tones that are carried from start to finish. Great chilled and slightly warmed it also has one of the more fun packages in the sake world. It makes a great gifting sake to those who you would usually give red wines to!
