True Sake Aha! Psssst! Come here sake drinkers! Come here! I found one of “those” sorts of sakes that are truly sneaky in the best sense of the word. At first blush this brew tastes very soft and easy with a nice gentle smoothness. And then WHAMO! It hits the back of your mind…. What did I just taste? Surely that was just a very drinkable and balanced Daiginjo made with stunning Yamadanishiki brewing rice right? That’s when your brain and palate digs your ice pick in to the frozen waterfall and you say to yourself wait! This sake is far too complex to be so simple. It drinks easy but wait, there are so many peek-a-boo flavor moments that it is like cave exploring. Is that pear? Apple? Powder sugar elements? A wonderful sake to pour for your two guests the sake uninitiated and the sake aficionado.
