Beau-Zone Layer – Kariho Rokushu "6 Ships"
From Akita Prefecture. Junmai Ginjo. SMV: +5 Acidity: 1.6
First of all this is a killer sake and one of my personal favorites to have with oysters! Need I say more? Heck Yah! This is a dry Junmai Ginjo and there aren’t too many of those out there in the land of fruity Ginjo sakes. It is an extremely drinkable brew that is balanced personified. But more than that this sake’s nickname is an amazing story unto itself.
The Kariho brewery does not use modern Yabuta air-filled presses to press their sakes. They simply do not own one, which is amazing as every brewery in Japan has at least one! Instead they use 6 very old “fune” presses that when aligned beside each other look like “6 Ships.” So come aboard matey and enjoy one very tasty sake that was pressed to perfection.
