New Store Arrivals 2014-11Two more fall draft released sakes called Hiyaoroshi have made it to the shelves at True Sake and they are both are worth a look – errr I mean a taste. They obviously won’t be around for long and they are built to feel the flavors of the season so come and give them a try!


Kikusui Junmai Ginjo Hiyaoroshi ‘14
From Niigata Prefecture
Junmai Gingo
SMV: +1 Acidity: 1.6


The nose on this fall released draft sake is a collection of steamed rice, mineral water, and sugar aromas. This year’s single pasteurized offering is drinking great! A very well balanced sake that drinks more like a solid Junmai rather than a fruity bouncy Ginjo. Smooth, round, gentle, and very drinkable look for subtle roasted rice tones and a hint of nougat. This brew represents a good example of how “Hiyaoroshi” sake should drink and it highlights the flavors of the season. WORD:Balanced WINE: Pinot Noir/Solid whites BEER: Gentle Ales FOODS:Salty and savory fare, pub cuisine, grilled fare.

The nose on this traditionally made pole-rammed draft sake is a filled with wood, steamed rice, marshmallow, and maple syrup elements. This year’s Otokoyama offering is a very user friendly sake that drinks dry, clean, and gentle and the actual flavor of the brewing water is quite noticeable. More flavors emerge in a larger glass and more body shows as the fluid warms. Look for hints of wood tones and there is a gentle vein of candy bar flavors. If you like your wines tight, dry and compact then this brew is for you! A very food friendly sake that does well with a gentle warming. WORD: Dry WINE: Dry reds/Crisp whites BEER: Crisp ales FOODS: Sushi, sashimi, soups and seasonal stews, grilled salty fare.
