The nose on this Seasonally limited released "Fall Draft" sake is an array of rich aromas such as raisins, cinnamon, cream, honey, balsa wood, and maple syrup. Wine lovers take note of a once- pasteurized sake that has a deep rich rice sweetness that is buoyed by a firm acidity that creates a gentle dryness. Look for complex flavors of honey, cinnamon, cedar, and a peek of mint throughout the juicy fluid. A unique roasted caramel element comes out closer to room temp. Urakasumi "Misty Bay"
From Miyagi Prefecture. Tokubetsu Junmai Hiyaoroshi. SMV: +1 Acidity: 1.5
This full-bodied seasonally released Fall Draft sake has unique nose filled with rice, grains, caramel, earth tones, and leather. "Hiyaoroshi" sake is a style of sake that is pasteurized once then aged for six months to allow for more richness and deeper flavors. Misty Bay does not disappoint. Round, thick, and smooth look for rich sweet tones such as caramel, maple syrup, with a woody background. This brew has lots of impact and the fullness speaks to those who like a big and vast flavors and feelings. Room temp brings forth a touch of molasses. Rich and savory almost a meal in a glass! Wakatake "Aki no Ki-Ippon"
From Shizuoka Prefecture. Tokubetsu Junmai Hiyaoroshi. SMV: +2 Acidity: 1.2
This seasonally released "draft" sake is called "Hiyaoroshi," which means it was pasteurized once then aged for six months and released to go with Fall and Winter cuisines. The nose on this demon slayer is a collection of grains, toasted rice, straw, and toffee elements. With more body than in year's past this brew drinks round, semi-thick, and rich with a tingle of acidity that brings forth a dryness that is bright and crisp. A host of flavors including cinnamon toast, raisins, short bread and butter cookies abound. A smaller cup brings forth more rich sweetness and a larger vessel gets the acidity play that highlights a minerality. Serve chilled but also enjoy at room temp.
