Ask Beau - "What was your favorite sake or flavor on your last trip to Japan?"

Geesh! There were so many! Where do I begin? Was it a three year-old aged Honjozo from Kikuhime heated with Ishikawa-style oden? That was awesome.

Was it meeting the producers of Akira "Organic" Junmai in their stall at the Kanazawa fish market then sneaking some of their sake over to the most amazing Oyster stand and eating a HUGE $12 oyster from Miyagi right there with the sake in hand? Yes I poured the sake into the empty shell and drank the remains.

Or was it the kani miso, with extra fresh crab chunks and an amazing egg served in the shell on a coal flame at my counter seat with Tedorigawa Ginjo? Superb pairing! And then of course I filled the shell with the sake and warmed it on the coal burner to a gentle nuru kan temp and drank the remains from the shell. Yummmmmm! I'll have to say that this flavor was the best of the trip!
