Welcome to liquid style! This tremendous Ginjo is silky, plump and luscious. How can something be so watery-clean and luscious? Who knows, and who cares because you will be amazed at how soft and elegant this semi-sweet brew drinks. There are mild fruit tones including pear and apple and these are enhanced in a larger glass. So clean and no aftertaste, must be the awesome water! SMV: -5 Acidity: 2.0 Yeast: Harushika #6 The aroma profile on this "aged unpasteurized" sake that is EXCLUSIVE to True Sake is flush with ripe fruit tones such as strawberry, mango, grape, and floral elements. Okay folks! This is the round, soft, super smooth fruit bomb sake that you have been looking for. A truly unique brew that is so velvety and ripe with explosive fruity flavors such as strawberry and honeydew that you would think it needs a huge acidity push - but none exists. Soft ripe fruit on a honey flavored gooey fluid. Fat, smooth and friendly - so drinkable with so much personality perhaps it is the 210 days of aging for this raw sake. Crazy! and 17% alc to boot! Shutendouji Kyo-Onna "The Lady of Kyoto"

From Kyoto Prefecture. Tokubetsu Junmai. SMV:-7 Acidity:1.6 The nose is filled with steamed rice, caramel, sweet corn, and mango aromas. Round, fruity, smooth and sweet this brew has layers of ripe flavors on a super velvety flow. Add to that a sense of richness and this chewy mouthful is a great example of how rice and water can taste like fleshy fruits such as mango, papaya and banana. Think tropical in flavor and smooth in feel and enjoy this sake out of the fridge. Perfect for Nigori "unfiltered" fans wanting to explore "filtered" sakes. Sato no Homare "Pride of the Village"

From Ibaraki Prefecture. Junmai Ginjo. SMV: +3 Acidity: 1.3 This sake is sake history itself. Brewed by the oldest active brewery in Japan, founded in 1147, its current president is a 55th generation family owner. It is one of those "Biblical" sakes. A refreshingly light nose mixed with banana, koji rice and cotton candy, it's full of ripe fruit flavors in a delicious chewy package. Bordering on syrupy, it drinks surprisingly dry. There is a nice backdoor taste of anise. A very good sake for those looking to make the leap from expressive wines. WORD: History WINE: Chardonnay/Pinot Noir BEER: Sweet ales FOODS: Buttery shellfish, sashimi, and chicken teriyaki.
Kamoizumi Junmai Daiginjo "Autumnal Elixir"

From Hiroshima Prefecture. Junmai Daiginjo. SMV: +1.5 Acidity: 1.2 This Daiginjo has a subtle nose of caramel and koji rice. It is a big-flavored Daiginjo that starts very clean and smooth and has a nice chewy viscosity. Look for flavors such as persimmon, mild caramel, ripe rich fruits and a hidden layer of mushroom. The finish tends to be more fruit-filled than the start. Deep and rich this Daiginjo is gloriously different than most. WORD: Caramel WINE: Earthy Burgundy's BEER: Honey Ales/Ambers FOODS: Meats and Game, especially venison and duck.
