Okay! I am a sucker for the packaging so let’s just get this out of the way right now. Currently my empty bottle at home has a flower in it, because it’s an awesome vase! They name this sake “Thousand Waves” because they only release a 1,000 of these cool ceramic bottles each year.


This Yamahai has the nose and the flavor of a robust full-bodied brew, but it drinks incredibly smooth and balanced for all of the action. A throw back bottle for a throw back form of making sake using the Yamahai technique, which is a method of allowing more naturally occurring lactic acid to be a part of the brewing process. If you have not tried a “Yamahai” this is a great starting point because it has the elevated acidity and the gamey nature of a true yamahai, but it does drink far more elegantly and maybe that’s why they put it in the elegant bottle.
