This unpasteurized seasonal sake is a “Genshu” which means it has not been diluted and has an alcohol content of 17%, and has a nose filled with vanilla, melon, bread, and plum aromas. This is a tale of two sakes! Chilled it is a frisky and zesty beast that has a semi-thick punch with melon and strawberry tones. As the sake warms more yeasty elements come forth. It is an expressive sake that drinks quite uniquely. Very food friendly but also a meal in a glass. WORD: Expressive WINE: Zesty reds/ Zingy whites BEER: Zippy Ales FOODS: This sake was made for all food – go for it!

The nose on this super seasonal sake is a fresh collection melon, pear, powder sugar and green apple elements. Talk about a lively unpasteurized sake that is fit for the spring to sprung. Crisp in the glass look for flavors galore including young pear, peach, melon, and crisp apple tones. Fresh and brash with a minty tingle that almost turns into a tasty minerality as the fluid warms. This is a great flavored sake that looks misty in the bottle like a distant snow storm in the middle of Spring. WORD: Crisp WINE: Zesty reds / Frisky whites BEER:Crisp ales FOODS: International spice, grilled large flavors, frisky cuisines with attitude.

The nose on this very special unpasteurized seasonal sake that is made using a peach yeast instead of a regular brewing yeast is a mild collection of melon, fruity, honey, and peach tones. This year’s Toukagen is lighter in body then in year’s past, but the fun flavors and impact are still very present. Talk about a slippery sake that has a little spritz to it this peachy beast is still extremely unique in a very tasty way. There is a generous flavor that at times tastes like peach and other times sips like apple. Is this year’s version cleaner? In a sense yes, but more body comes as the fluid comes to room temperature. WORD: Flavorful WINE: Complex reds/Frisky whites BEER: Unique ales FOODS: International spice, shellfish, grilled fish.

 

Gokyo Arabashiri

What a great nose on this unpasteurized seasonally released sake with lemongrass, strawberry and powdered sugar elements. Why drink nama sake? This brew is the reason, because it drinks raw, bright, frisky, brash and absolutely fresh! It is living and it drinks that way. Look for waves of strawberry, kiwi, powdered sugar, and persimmon flavors that dance on a jumpy fluid that zings through the palate. It’s fruity but the flavors dry up by the long and splendid tail. A mid-size glass brings out more flavors and a wine glass sports a longer finish. This seasonally released super fresh sake has a glorious nose filled with blueberry, yeast, sweet rice and fruity aromas. A fun fresh slippery raw sake that is thick and full-bodied in a rich way. Talk about a lush sake this brew drinks like liquid velvet with hints of melon, blueberry, and mint. It has more body then last year’s version and plump is the word. As the fluid warms more honey tones emerge and a larger glass thins the brew out. Go midsized glass and go for an amazing feeling sake. WORD: Velvety WINE: Thick reds/fat whites BEER: Belgian Ales FOODS: Salty and savory cuisine, international spice dishes, grilled fare.
