The nose on this unpasteurized sake is a gentle collection of grape, peach, cut grasses, papaya, pineapple, button mushrooms, and canned oranges. Say hello to Den’s second effort brewing with the “King of Rice” varietals called Yamadanishiki grown in Sacramento, California. Fresh, compact, viscous, smooth, rich, and raw. This Batch drinks with more acidity play featuring a unique salinity upfront and an umami back. Think dry fruit tones on a crisp fluid that is zesty, edgy, and has an herbal and clove finish. Look for peach, nectarine, mint, dried apple, lemon lime, apricot, and a cool ocean water salinity flavor that excels in a white wine glass. Wine drinkers and foodies take note of this brew that is built to pair with cuisines of all types. WORD: Expressive WINE: Rich Reds/Crisp Whites BEER: Citrus Ales FOODS: Sushi, sashimi, crab, oysters, grilled fish and fowl, vinegar and citrus based fare. (Batch #2)

The nose on this American sake success story is a elegant collection of apple, cherry, melon, rain water, and peach aromas. Say Hello to Batch #1 of Den’s first efforts using the “king of sake brewing rice varietals” called Yamadanishiki, which is grown locally in Sacramento California. Local rice, local water, and local sake maker who is making Japan sit up and take notice of sake made offshore! Soft, smooth, bright, lively, clean, this is an elegant Nama that is active, expressive, and balanced with gentle fruit tones and a tasty umami finish. In a word it is clever sake that tantalizes the sake pros, and welcomes sake starters. Look for yellow apple, green grape, young mango, ripe kiwi, nectarine, plum, celery, aloe vera, and cherry flavors with a noticeable umami ripple. Round and smooth the strength of this brew is its balance, which is revealed more as the sake warms in the glass. WORD: Balanced WINE: Soft Reds/Round Whites BEER: Creamy Ales FOODS: Sushi, sashimi, grilled fare, seafood appetizers, Yakitori.
