Chikurin Otoro Junmai Ginjo Nama "Otoro"
The nose on this seasonally released sake is a very clever collection of green apple, melon, cucumber, and sweet rice aromas. Say hello to a first time in the US unpasteurized sake from a killer brewery that uses only brewing rice that they grow themselves. Wow! What a unique and powerhouse sake. From the first sip to the gentle departure this sake drinks more like an intelligent game-plan than a typical sake. First we have a bright and Nama-like lively start that reveals crisp layers of apple, young pear, and Asian Apple Pear candy on a spritzy fluid that exits dry and calm. But wait! What was that? What was that first sip? It was beyond effervescent and wasn't a distraction at all! So many brews today have a very pronounced and punchy effervescence to lively up the sip. But Karoyaka has cleaned that up and made a fantastic drinking experience. It’s better than lively and that’s awesome.
