The nose on this "new-to-the-store" summer unpasteurized brew is a slick collection of pear, berry, cantaloupe, sweet rice, coconut, and dried cranberry aromas. Say hello to the driest Nama that we’ve ever had at the store, and just so happens to be a food-pairing monster. This sake is a superstar for a BBQ, beach party, or Yakitori, as it drinks laser dry, but with great feeling. Dry, full, plush, round, and plump, it drinks sort of watery and clean for all of that dryness. How do they do that? Maybe it’s the 19% ABV that drinks like wet dryness and carries a load of flavors such as pomelo, lemon-lime, kiwi, rice cracker, tofu skin, salinity, mineral water, and has an underlying umami character with a quick finish. This brew is dry and shows in so many fashions that it is uniquely awesome, and should be paired with any fatty meat, pork, fowl, or oily fish. WORD: Dry WINE: Dry Reds/Mineral Whites BEER: Flinty Ales FOODS: Sashimi, American sushi, crispy pork, dim sum, yakitori, bacon, cheesesteaks, burgers, and BBQ. (2023)
