The nose on this small batch craft sake is a glorious collection of pear, melon, banana, and floral aromas. Welcome to yet another awesome batch of fresh unpasteurized sake from Den. This brew is bright, raw, fresh, fun, crisp, and very flavorful. Get your flavor finder out because there are all kinds of action from blackberry and green apple to melon and young pear, which produces a snappy and ripe bright fluid that would appeal to tannin-loving wine drinkers who like that  slightly drying effect in the palate as the fluid flows. A small cup produces more fruit tones, a mid-sized glass is fresh and crisp, and a wine glass is where it’s at! There is a wonderful quality to this sake that is big in Japan. “Shibumi” (astringency) is that complex element that brings more flavor to this brew like persimmon, cranberry, and young pear. The nose on this locally made craft sake is a gentle collection of vanilla, steamed rice, wood paddle, citrus, and veggies. Welcome to a rich and round unpasteurized sake with a tantalizing acidity that plays differently in different sized glasses. There are gentle hints of melon, honey, sweet rice, and some say watermelon. A larger vessel like a white wine glass actually smoothes out the brew and brings forth a little more fruit tones like strawberry and honeydew, and a smaller O-choko lets you focus on the lively and bright acidity.  The structure of this sake makes for a great food pairing partner, as the acidity gives it depth and great spontaneity to adapt to large and complex fare. The nose on the second offering from this brand new brewery is an elegant collection of green apple, sweet tea, lemon peel, with a hint of herbs and banana aromas. Welcome to the second successful offering from Yoshi and Lani’s Oakland kura (brewery). This is a very flavorful nama sake that is bright in the palate and layered with very nice balance. Smooth, round, and with a fun acidity play that is excitement in a glass. Look for white grape, apple, and melon flavors that are buoyant in the mouth, and as the fluid warms a nice koji rice flavor with hints of honey emerge. Lower in alcohol at 14% but larger in smiles this local brew is a great sake to taste brewery to household freshness. WORD: Balanced WINE: Zesty Reds/Crisp Whites BEER: Crisp Ales FOODS: Fresh flavors from the sea and sky.

The nose on this small brewery craft sake is made up of green apple, powder sugar, sweet corn, and melon aromas. First of all, I LOVE typing Oakland for this review! Secondly, this sake drinks like any sake that you would find made by the best breweries in Japan. You are not “taking a chance” on this sake, but you are missing a chance to taste an excellent Muroka Nama Junmai if you don’t. Den drinks round, smooth, and full of rich flavors on a lively fluid that is very well balanced. Look for hints of vanilla, steamed rice, asian apple pear, and a lick of honey. There is a very nice acidity play that makes the sake pop even though it is on the rich side. This bright flavor full-bodied brew does well in a white wine glass, and it is lower in alcohol at 14%.
