Dewatsuru Kimoto Junmai
The nose on this “pole rammed” sake is a wonderful collection of roasted rice, chestnuts, honey and nougat aromas. This is very solid kimoto sake that feels great in the palate. Think smooth, round, creamy, fat, rich, and very velvety. Look for roasted, ricy, and chocolaty flavors that become more like rich fruit tones as the fluid warms. If you have never tried sun warming a sake for a cool evening this is the brew. Great at so many different temperatures because it is so balanced.
