This sake is Junmai Daiginjo produced in collaboration between ENTER.Sake and NEXT5.  NEXT5 is a collective of five young brewers in Akita prefecture.  Every brewing season they gather together to craft a special sake with each of the five partners overseeing one part of the sake production.  For 2015, the NEXT5 produced sake at Aramasa for ENTER.Sake. The sake is made in the traditional Kimoto style, and fermented in cedar which is more than 130 years old, then aged in oak. The sake is new, unique, and very rare - the perfect balance of East and West.  Only two tanks of this sake were produced exclusively for ENTER.Sake: one for release in Japan and one for export.
