Fukucho Junmai Ginjo Nama Genshu "Moon on the Water"
The nose on this seasonally released brew is a fruity collection of plums, citrus, papaya, melon, pear, lime, and rose water aromas. Say hello to a “Home Run” unpasteurized sake that is a pure winner. This year’s Fukucho is simply amazing sake. Tingly, fresh, bright, effervescent, and very lively - let the fun begin. The balance stands out amongst all of the fun fruit elements such as green apple, honeydew melon, ripe pear, mint, and a kiss of anise. In a word, this is 3D Junmai Ginjo sake that is filled with fruit layers on top of fruit layers that work so well together. The fluid is up-front and fleshy with a zesty tingle and a magical mineral tail. Finishes with a lovely aftertaste that completes this incredible sip. The nose on this very expressive seasonally released unpasteurized sake is a lively collection of cherry, peach, strawberry, raisin, melon, and floral aromas. If a nose could talk! Well the aromas on this brew really match the flavors of the brew itself and that is awesome. So many fruit tones on a lively, zesty, tingly, effervescent fluid that is brash, bright and so much fun. We are very glad to have Moon on the Water back in our Nama fold, because it is a great example of how rice and water can taste like so many fun flavors such as apple, cantaloupe, pear, kiwi, and mango. This is a perfect sake to compare against its pasteurized version, which we also carry. Try them both side by side to determine for yourself what pasteurizing a sake does to it’s feeling and flavor profiles.
