Fukukomachi Junmai Ginjo “Fair-Lady Komachi”
The nose on this Akita-style Junmai Ginjo is a cool collection of toasted rice, caramel, ocean water, cinnamon, tofu, buns, cake, and tangerine aromas. This very tasty sake is a great example of a “How did they do that?” brew that is both delicious and thought provoking. Smooth, chewy, soft, light and gone! There are feelings, flavors and then a phantom finish. Where did the finish go? Look for sweet rice, marshmallow, milk tea, powdered sugar, cream, honey, doughnut, and a hint of citrus flavors on a semi-viscous rich, weighty, and layered flow that is round and slick. This is soft and elegant sake that disappears with a quick mineral goodbye (Kire). If you want to warm it look for a touch of cocoa, and enjoy the many food pairings that this brew rocks.
