This very unique sake is made in a special way that marries “Two koji-kin” in one distinct sake that has a very mild nose that has hints of koji rice. Yes folks! Look at those numbers -7 and 2.4 One is very low as in potentially sweet and the other is quite high in terms of acidity, which actually counters the sweetness. What you get is a super sweet sake that is gooey but light with hints of citrus and honey on a fluid that sticks to your teeth. Is it sweet or is it sour? Or is it both? This sake is made for sake explorers, who want to see all realms of sake. Why make a sake with both yellow and white (shochu) molds? Who knows, but if you want an awesome drinking experience this is your brew!
