Kaze no Mori "Alpha Type 3"
The nose on this sake with a warning label (?) is a great collection of green apple, raspberry, ocean water, peach, rice cracker, and cocoa aromas. This is a new style sake made in a way where the brewers try to capture some of the natural CO2 to make an effervescent, light, and crisp drinking experience. Talk about a feeling brew that starts dry, clean, and crisp, and then gently relaxes in the glass, exposing an umami-filled finish. Look for dried cranberry, apricot, young persimmon, Asian pear, black berry, young melon, mineral water, and crisp apple flavors on a fluid that is lively and bright. This is a “sashimi” sake that is great with clean sushi counter fish, because of the tight, clean, and compact nature of the brew.
