This super famous brewery sadly was damaged in 2016’s kumamoto earthquake to the point where they had to close operations for a year. The good news is that their collection of proprietary yeasts were saved, and the better news is that Kouro is back! This new version of Kouro Junmai Ginjo is still a world class sake with a nose of cucumber, nougat, and steamed rice. Welcome to a more rich and solid Kouro that is round and chewy with a lot of body. There are rich and savory flavors of cooked rice, sourdough bread, rice pudding, and nougat on a velvety flow that appeals to Pinot Noir drinkers. The strength of this new version of Kouro rests in the body and feeling of this sake that warms quite nicely in the glass. It’s not a big fruity and bombastic Junmai Ginjo, rather it is a solid look at great rice and great brewing water. It is very full-bodied and very Junmai-ish and that is cool! This extremely "educational" sake has a vast nose filled with strawberry, lychee, honeydew, vanilla and apple elements. How can something drink so clean and yet have so much body! This is the mystery of a classic brew that has an enormous mouth feel, which coats the mouth with gentle and nuanced flavors. A rice-driven Ginjo with hints of unripe fruits, a layer of vanilla, and a wisp of the infamous umami characteristic. So soft, so chewy, so rich and yet so well balanced. For the well versed behold "shibumi" (astringency) in a delicate delivery and "kire" (quick finish), which is amazing for so much body. Larger glasses and closer to room temperature bring out more "moods."
