Manzairaku Junmai Daiginjo "Hakusan"
The nose on this very special premium sake that uses the highest graded brewing rice is a subtle collection of steamed rice, berry, and melon aromas. Quite frankly this is professionally clean sake! Huh? It is basically one of those “like water” sakes that drinks so clean you’d think it was just water. BUT! This brew is on a much higher level, because it drinks so clean, but there is so much complexity in the nuance. It’s drinkable as hell, but the fun is finding all of the deep components that come forth at different times. It epitomizes balanced sake. Ricey and rich, but watery and slippery. Look for a vein of nougat or a tease of pear. Oddly this sake is too complex for a wine glass as it gets too like water, so a small O’choko or small cup works the best to feel the uniqueness of this sake.
