This Daiginjo has a brilliant nose filled with hints of ripe peach, sweet rice, and a touch of mushrooms cooked in butter. Talk about a soft sake with loads of flavor, this baby is as dry and clean as they come for sakes polished at least 50%. There is a slight caramel middle flavor that drifts on an incredible softness. The dryness and softness will blow your mind, and the complexity will baffle the senses. WORD: Dry Water! WINE: Merlot/dry whites BEER: Light ales FOODS: Made for fresh oysters! Also great with veggie soups, grilled chicken, and salted fish.
