The nose on this special sake from a special sake making group has a nice collection of green apple, ricey, and minty elements.This brewer’s motto is “We Love Sake,” and you will love this unpasteurized “Nama” Junmai Daiginjo. It’s juicy and fruity, smooth and round, and drinks with a brightness found in “raw” sake. Look for mint, green apple, dried pear, and peach flavors on a bold Daiginjo flow with an attitude. You can tell by the smoothness that this is a Nama Daiginjo, but it still has lots of umami tingle in each sip. WORD: Lively WINE: Deep reds/crisp whites BEER: IPAs FOODS: Sushi, sashimi, shellfish, oysters. 

NOTO, a high grade Junmai Daiginjo sake, uses only local rice grown without pesticides or chemical fertilizers. It was brewed at Kazuma Shuzo, a 150 years-old family brewery in Noto Peninsula. The smooth “umami” taste that pairs exceptionally with fish and sushi is symbolic of the brewery’s location, a fisherman town famous for fresh fish.
