The nose on this ultra popular, seasonally released unpasteurized sake made with the very famous Ginpu rice varietal is a cool collection of cotton, melon, blueberry, lemon-lime, daikon, and mineral water aromas. If you like your Namas ricey, then this brew will speak to you. Dry, clean, round, velvety, medium bodied, and very smooth, this sake drinks like a Junmai brew. There are layers of flavors such as rice cracker, rice noodle, sourdough crouton, dried apple, melon, Asian pear, and a touch of ocean water. As the fluid warms, rich flavors such as vanilla and cream round out the sip with a very quick kire finish and a touch of shibumi, which this raw sake drinks all the more lively! It is very fresh after all! WORD: Dry WINE: Dry Reds/Mineral WhitesBEER: Crisp Ales FOODS: Sashimi, sushi, white fish carpaccio, oysters, scallops, tempura, fried octopus, squid and chicken, and warm tofu. (2024)

The nose on this fan favorite unpasteurized Spring Draft sake that is a “Genshu”, which means undiluted, has a unique nose filled with lychee, honeydew, pear, mint, yeast, dried grains, river rocks, and puffed rice. How cool is a polar bear with a sake cup? About as cool as this very user friendly and drinkable Nama that is as easy as a Spring blossom falling. Dry and clean with a secret flavor field that must be unearthed from the very gentle, nuanced, and subtle sake, this brew is for those who like Cup Sake. Smooth, clean, ricey, and slightly watery look for Asian pear, wheat toast, snow melt, young melon, grains, grapes, caramel, white pepper, and sweet rice flavors. This is a gentle easy sake that is made to be super drinkable with a dry and tight finish. WORD: Easy WINE: Light Reds/Dry Whites BEER: Light Ales FOODS: Pub fare, salty and savory, grilled and fried, greasy and starchy, French Fries, and Onigiri.
