Shichida 75 Junmai
The nose on this legendary brew is a fun collection of musky, creamy, cheesy, yeasty, smokey, ricey, and citrus aromas. Smooth, rich, round, layered, and soft. This brew drinks savory and sweet, which is probably the result of the very legendary rice varietal called Yamadanishiki, milled to 75%. Look for hints of cherry, crisp apple, cereal, wheat toast, walnuts, brown sugar, and salt caramel flavors. A super smooth Junmai that is rich but overall drinks light and semi-dry, which means the bottle disappears quickly! Beware of this very nice sake, because it will be gone before you know it.
