The nose on this unique brew is a cool collection of rice powder, mineral, cooked peaches, leather, butterscotch, and earthy aromas. First of all, there is not a lot of Yamanashi sake available in the US, so this is a rare treat. Second of all, get ready for a dry sake drinking experience that shoves fruity Junmai Ginjo out of the way. This brew is tight, crisp, earthy, and very much on the dry side that speaks to those who love their tequila, whisky, and scotches. Considered more of an “old-man-sake-drinker” brew. It is compact, ricey, savory with a lot of texture on a crisp fluid with a snappy finish. Look for rice, citrus, mineral, toast, and rice-cake flavors that do better in a smaller glass, and when warmed check out a zesty citrus play. Not your typical Junmai Ginjo, and that’s a good thing.
