Who says the Junmai Daiginjo category cannot produce “work horse” sake that appeals to solid and full-bodied fans? Does Junmai Daiginjo always have to be delicate and elegant? Hell no! And this Bull Rider from a killer brewery in Gunma is proof that Junmai Daiginjo sake can be drunk with a working man or woman’s personality that doesn’t get all fancy and frilly. Solid sake is solid sake. It feels good in the palate and tastes good without being too fruity or too sweet which often occurs in the JDG category. This genshu or “undiluted” sake packs an 18% alcohol content, but that doesn’t distract from the overall personality of the sake. It’s not boozy, it’s not unbalanced, and it’s not all over the place. Ryujin is known for making excellent and balanced sake, and this special brew was the brainchild of Toshio Ueno and Mutual Trading Company for the Texas Market. Ueno-san was thinking what to name the sake when suddenly a bull riding competition came on television and he said that’s it! His wife then designed the label and the rest is sake history.
