This fresh and flavorful category of sakes represents sake in its “rawest” and most pure form. Typically sake is pasteurized twice as the preservative (no sulfites in sake) to keep the sake stable for shelving at the market. Nama sake has not been pasteurized and the result is a larger and brasher sake that speaks to people who like impactful sakes that are both drinkable and food friendly.
