    The nose on this seasonally released single-pasteurized sake is a great collection of blackberry, steamed rice, and apricot aromas. Talk about a supremely smooth Hiyoaroshi sake that drinks rich but clean with layers and layers of flavors on a round flow that feels great in the palate. It’s soft and lush with a gentle sweetness that is more rich and smooth than sweet. Look for apricot, cooked pears, and a fruit compote feeling that drinks chewy and viscous with a back door nuttiness.     The nose on this single-pasteurized seasonal sake is made up of smoky, burnt rice, caramel, and earthy elements. Well this special sake is a great example of a different “expression” of a sake that you love. So many folks love the Kikusui JG for good reason, but behold a sake that is similar in elegance but different in complexion. This is an elegant Hiyaoroshi that drinks smooth and semi-rich with a flow that is velvety, silky and nice! Not as bright as the JG, this slightly aged sake has a little more rich sweetness that is mellow and well balanced.     The nose on this unique sake is a wonderful collection of butterscotch, caramel, and maple syrup candy aromas. Why is this sake special? Because it has only been milled or polished to 80%, which isn’t that much, but draws and emphasis on feeling and flavor. This brew is superb and shows you how tasty and confident a true Junmai sake can taste. Smooth and lush, rich and round, and layered and balanced. This sake represents and a new fuller bodied sake coming from Niigata prefecture and it drinks like a dream. There is a solid roasted rice vein with hints of honey and a dash of caramel tones.
