Denshin Natsu 2018 “Summer”
From Fukui Prefecture. Junmai Daiginjo Nama.SMV: +0.5 Acidity: 1.5
The nose on this very fresh unpasteurized sake is an interesting collection of sweet tomato relish, pear, and cantaloupe aromas. Say hello to a Nama Junmai Daiginjo! There are not a lot of those out there so it is important to taste one while you can. Why? Because now you are dealing with elegant nama zake. Typically namas tend to be heavy and zesty and very lively, this summer brew is slippery and soft with very classy silky qualities that speak to those who like very refined sakes. It is a true Daiginjo experience with layers of ripe flavors and gentle feelings. Look for hints of pear, melon, and rice krispie treats in a fluid that does better in a larger wine-like glass. Ohyama Summer Nama 2018
From Yamagata Prefecture. Tokubetsu Junmai Nama.SMV: -1 Acidity: 11.7
The nose on this summer released unpasteurized sake is a gentle collection of melon, grape, and sweet rice aromas. Get ready to chillax with “Big Mountain” this summer as this brew is far more gentle then in year’s past. It is a very round and smooth nama that one can almost say is easy on the palate. There are no sharp or jagged edges with this living sake, but that doesn’t mean that it is not bright. Chewy, smooth, juicy, and semi-dry there are hints of green apple and fresh pear with a very minerally over-all freshness. This is a very good introduction to unpasteurized sake, as it shows new flavor levels with a refreshing liveliness that isn’t brash or zesty. Otokoyama Summer Nama 2018
From Hokkaido Prefecture. Tokubetsu Junmai Nama.SMV: +2 Acidity: 1.4
The nose on this summer released unpasteurized sake is splendid array of green apple, grasses, snow melt, and steamed rice aromas. This brew is a very classy summer nama that drinks cool and confidently fun. Light and dry with loads of “tip of the iceberg” flavors that keep showing more and more as the fluid warms in the glass. Very gentle nama zake that is smooth and clean with hints of pear, cantaloupe, and green apple Jolly Rancher flavors. It is a clever sake that appeals to dry sake drinkers, but has all the body and movement of a lower SMV brew. The label speaks volumes as this sake is pure summer fun with a ton of freshness and lots of flavor surprises. Shichida Summer Nama 2018

The nose on this summer released seasonal sake is a gentle collection of grapes, white pepper, floral, and candy aromas. This is a fun summer brew that knows what to do! It knows to drink light and bright with a tingle of sunshine zest. This is liquid summer in a bottle with juicy light flavors of anise, melon, and minerals on a dry fluid that is not bulky or beefy. Snappy, crisp, zesty, and lively it is fruity but with a solid dryness that speaks to those who like their tannin wines. It is a lower alcohol sake at 14%, but this doesn’t impact its wonderful flavor field. Light and confident this nama is perfect for picnics and sunshine at the beach.
