Gokyo Arabashiri 2018
From Yamaguchi Prefecture. Junmai Nama Genshu.

Spring is Nama Season! And the nose on this unpasteurized sake is a ricey collection of wax, steamed rice, yeast, banana, and cream aromas. If you’ve been waiting a year to get raw with Gokyo again, then here is your nama playmate! Once again Gokyo brings you the full-effect of spring namas, which are generally zesty, bright, effervescent, spritzy, and all the other words for lively sake. This is it! Sake at its most brash and wonderful state. There is a lot of zip in this light fluid with hints of pear, tangerine, grapefruit, and a special marmalade finish. Gokyo wins the brisk and brash prize yet again and if you want to live in your glass of sake then this living brew is for you! WORD: Zesty WINE: Crisp Reds/Brash whites BEER: Crisp ales FOODS: International spice, foods on a stick, pub fare, spicy seafood, American sushi. $39/720ml

Koshinohomare Shiboritate 2018
From Niigata Prefecture. Junmai Nama Genshu.
SMV: +4 Acidity: 1.6
Say hello to spring released unpasteurized seasonal sakes! The nose on this nama is creamy, with a little yogurt, melon, and green apple Jolly Rancher aromas. If you want your sake fresh then these namas are for you, as they are released early to capture all of the lively and bright elements not usually found in pasteurized sake. Bright, tingly, and very zesty this brew drinks spritzy and fun. Look for hints of melon, peach, and a nice cover of cream. A larger glass offers more creaminess and less fruit forwardness. This is the flavor of spring for sure as the balance of the sake allows it to pop in the palate. Fresh and fun! WORD: Spritzy WINE: Crisp reds/tingly whites BEER: Crisp Ales FOODS: Chinese Dim Sum, international spice, grilled and barbecued. $29/720ml

Denshin “Fuyu”
From Fukui Prefecture. Honjozo Nama.
SMV: N/A Acidity: N/A
The nose on this seasonally released sake (look for the snowman on the bottle) is a fat collection of meaty, veggie, onion, soup, and yeasty aromas. Talk about a fat, fun, and velvety sake. This “snowman” is viscous, plump, and smooth with lots of rich and round dried fruit flavors. Big and beefy it says hello to your palate with a solid and rich smoothness. Not dry and not fruity it just sits ricey, rich, gooey, and very fleshy. It is smooth with hints of raisins, dried fruit, cooked pear, and sweet rice licks. Seasonally smooth this unpasteurized sake has a very plump alcohol level (18%), but you taste more of the fat action than the booze. So velvety and so Frosty! WORD: Smooth WINE: Soft Reds/Thick whites BEER: Belgian Ales FOODS: Salty and savory pub fare with burgers and fried food with spice. $31/720ml $62/1.8L

Makiri Draft Extra Dry
From Yamagata Prefecture. Kimoto Junmai Ginjo Nama.
SMV: +10 Acidity: 1.5
The nose on this seasonally released nama is filled with cherries, mineral water, and floral aromas. Hands down the driest nama to bless our shelves. If you like it dry and lively this brew is for you. Look for cooked rice, raspberry, and quince flavors on a zesty flow that is sharp and cutting. It is semi-thick and juicy, but dry! How do they do that? It has dried trail mix fruit flavors that work better in a larger glass. WORD: Dry WINE: crisp reds/dry whites BEER: Tight Ales FOODS: Made for greasy fare! $50/720ml
