The nose on this sake that is milled to 38% is a gentle collection of pear, apple, mango, pineapple, lime, strawberry, and sweet rice aromas. Talk about a sake that would work well at a high-end sushi dining experience, this Daiginjo IS a drinking experience. Smooth yet bright, spritzy, and crisp, this sake drinks with lots of shibumi and would appeal to wine drinkers who enjoy elevated acidity. Look for stone fruit, peach, nectarine, pear, mango, pineapple, kiwi, blueberry, and a vein of honeydew melon as the sake warms in the glass. There is a very intriguing subtle umami and alcohol play that makes "Equilibrium" drink balanced with a dry finish. Enjoy this smooth and cold drinking experience out of a white wine glass.
