The nose on this sake aged for five years, Hizo or “Treasured” is a very cool collection of sweet nuts, white grape, grapefruit, and a touch of musky aromas. This is one of those “Bucket List” sakes that every sake drinker must try. Basically, it is a competition-like sake that is stored for five years to bring out layers and layers of flavors. The amazing thing is that it is so approachable and drinkable, but sake thinkers will find a ton of elements to explore. Some get nutty flavors, and some get rich fruit tones of kiwi, strawberry, and cooked pear, but they all agree that there is a great dry finish that is quick and to the point, which is awesome for an aged sake! How do they do that? Clean, crisp, round, and very tight, the fluid opens as it warms in the mouth.
