Ohyama Tomizu Tokubetsu Junmai "Special Water"
The nose on this Junmai that drinks very much like a Ginjo is an array of white grape, apple, pear, cucumber and berry essences. This is not your usual dry and simple Ohyama rather it is a very impactful brew with layers of powder sugar, sweet rice, apple, and young pear flavors. A super flavorful sake that drinks silky smooth and juicy but is not overtly sweet. There is a little astringency that speaks to wine drinkers and a smaller cup highlights the flavor ride. Good fruit tones, good feeling, good sake that speaks the Yamagata style of flavor and feeling.
