Nechi Otokoyama Junmai Ginjo
From Niigata Prefecture. Junmai Ginjo. SMV: +2 Acidity: 1.3

Oh Boy! I’ve been waiting for a long time for this obsessive brewery to export their really unique and “Terroir” driven sakes. These guys are fanatics when it comes to their rice, which they grow emphatically! Huh? Yes, this brewery is known for knowing exactly where their rice grows the best in all of the rice fields. They do studies. They track year after year where exactly the best rice grows within the best of their fields. And this is about as close to “Terroir” you can find in sake today.

This Junmai Ginjo is a great bottle of sake. It is velvety and rich and drinks plump, viscous, and fat in the glass. Sakes that are both layered and balanced mean something and in this case it means exceptional sake. Taste this brew for layers of rich rice flavors, oatmeal and other grains, but focus on the rice – they did!
