Akishika Okarakuchi “Super Dry”, $42
From Osaka Prefecture. Junmai Ginjo Muroka Nama Genshu. SMV: +16 Acidity: 2.2

The nose on this crazy dry sake is filled with dried fruit, wet wood, cocoa, and vanilla aromas. This is now, pretty much, the driest sake in the store and it’s unpasteurized to boot. Go figure! For all you fans of really bone dry sakes this brew takes the cake with a super quick fluid that is loaded with rice tones. Not only dry, this sake has an alcohol content of 19.5% that speaks to clear liquor drinkers and foodies who like cutting through the oil in dishes. A mid-sized glass is a better vessel to capture the unique flavors and enhances the dryness without poking a stick at the very high acidity. Crisp, tight and compact, this sake sings the tune of dryness. WORD: Ultra Dry WINE: Dry reds/Crisp whites BEER: Crisp ales, IPA FOODS: Salty savory fare that needs the salt tamed.

Uehara “Soma no Tengu” “Forest Spirit, $36
From Shiga Prefecture. Junmai Ginjo Muroka Nama Genshu Usunigori. SMV: +6 Acidity: 1.6

The nose on this really unique sake is a splendid play of cream, yeast, nut, and yogurt elements. This brew is very much outside the box, and that is what makes it so appealing to sake pros and rookies alike. Firstly, it drinks great, so jump right in new guy! That said, take a look at the color of this “semi” nigori that means it’s more misty than fluffy. Wait, you say you don’t like nigoris? Me either, but this baby is so much more so stand down. Creamy, round, and semi-sweet it drinks more like an adventure and add that yellowish hue and you know this sake is different. There are a lot of koji or sweet rice flavors, mixed with cream, cream cherry and a hint of coconut. It drinks far dryer than the flavor and the roundness of the sake fills the palate with smooth goodness. Kidoizumi “Hakugyokko” “Fragrant Jewel”, $39
From Chiba Prefecture. Yamahai Junmai Muroka Nama Genshu. SMV: -5 Acidity: 2.1

First let me say that there aren’t a lot of Nama Yamahais out there, so this sake is special. The nose is a beefy collection of honey, candy, banana, and birthday cake aromas. This sake is sort of a throwback brew, but with a cleaner and more flavorful twist. It is fat, gooey, thick, plump, juicy and sweet. But the higher acidity doesn’t let this brew drink as sweet as it could. There are plenty of chewy flavors to look for like honey, banana, and sweet rice, all of which give this sake a late harvest feel to it. If you are into sake exploration, this sake is a prime example of a brew that is affected by its acidity in a sense that it tames a thick and sweet beast. It’s sort of a brewing wonder and add to that the fact that it is nama and you are partaking in a very unique sake drinking experience. WORD: Fat WINE: Fruity reds/Chewy whites/Dessert wines BEER: Sweet ales FOODS: It’s so unique that it plays very well on all types of menus
