Sake Exclusives – Special Brews That Are Only Available At True Sake

This is a subtle reminder that there are a lot of sakes out there nowadays and a lot of places to buy them. But you know that! What you may not know is that we greatly appreciate your business and continued loyalty in this special niche business. Our customers are the greatest aspect of the True Sake experience, and we never forget that! In fact it motivates us more to expand our offerings and to secure certain sakes that you cannot get elsewhere outside of Japan. 


So every now and then we will “feature” aka “remind” you about a sake that is unique to True Sake, and is also pretty darn good if we went through the effort to secure it for you. 


This month take another look at an amazing Junmai Daiginjo from Gifu prefecture’s Watanabe Shuzoten Sake Brewery. You might see this very distinctive “W” label around town or on-line as they make fantastic sake using different special brewing rice varietals, but you won’t see our bold red W anywhere else thanks to our friends at Suzuki-Marketing, a South San Francisco based sake importer who imports the entire line of brews that drink big, fruity, bold, and very fun. 

 

When they initially brought True Sake their entire line-up they said that we could pick the brew that we like most as our own Exclusive “W” product. And of the 7 different Junmai Daiginjo we loved the Muroka Genhsu featuring Aiyama rice the most. Milled to 50%, using M310 brewing yeast, and not charcoal filtered, this fruity brew drinks big and very full with a perfect combination of fruit tones and a lot of umami, which is very cool. The SMV is -3.5 and is offset with a bright acidity of 1.4 and the overall drinking experience is smooth and delicious. (The statistics on the back label read differently, but ours are direct from the brewery) And we are very proud of the Aiyama rice varietal, which has been called the “Diamond” of the brewing rices  for all of its balanced umami qualities. 


So don’t sleep on this True Sake exclusive brew! 

Watanabe “Aiyama”
From Gifu Prefecture.  Junmai Daiginjo Muroka Genshu. SMV: -3.5 Acidity: 1.4 The nose on this exciting Daiginjo is an outstanding collection of strawberry, white peach, lychee, mango, honeydew, condensed milk, and other tropical fruit aromas. Drinking sake is supposed to be fun, and nothing is more fun than sipping a sake that has an impact and incredible flavors. This “W” has both, as it is a Genshu (undiluted 17% ABV) and Muroka (non-charcoal filtered) that allows for more body and attitude that drinks vivid and expressive. The brewers use Aiyama sake brewing rice, which is considered the “Diamond” of rice for its balanced umami and its ability to produce fruit tones that are out of this world. Look for pear, strawberry, mango, papaya, peach, lychee, sorbet, and mineral water flavors that glide through the palate on a velvety, slippery, ripe, and lush flow.
