True Sake Spotlight – Meet Zoe and Enjoy Her “Staff Picks”
Hi all,
Happy New Year!
My name is Zoe. I'm a food lover who enjoys pairing sake with different types of cuisines (for science!). Burgers with Kimoto Junmai is the perfect combo and Nama Genshu with spicy hotpot is a winning duo! I fell in love with sake when I was visiting Kyoto and started my real sake journey working at True Sake. I'm excited to share more sake stories with sake lovers!
My Staff Picks:
Kaze no Mori Junmai Nama Genshu "Black Label Wind of the Woods"
This is my favorite modern sake bottle. It has a nose with fruity and earthy aromas. Its complexity, effervescence, and balanced umami finish make it perfect for wine lovers, and it pairs wonderfully with hotpot or Korean food.
Katsuyama Junmai Ginjo "Ken"
Looking for something elegant, aromatic, with a clean and dry finish? This award-winning, 50% milling-ratio Junmai Ginjo is the one. It's so elegant, smooth, and crisp that you can enjoy it on its own, as well as with food.
Tedorigawa Tsuyusanzen Junmai Daiginjo Nama "A Thousand Drops of Dew"
Looking for a special bottle for a special someone or occasion? This one has everything you're looking for. It’s a nama sake made using the shizuku (drip) method, without any pressure pressing, only the sake that drips freely is collected. This one-of-a-kind bottle with super elegant umami, silky fruity layers, and a mineral, soft finish. Just like watching your favorite Japanese artistic movie or reading a Haruki Murakami book, unique and impressive.
Nanbu Bijin Shinpaku Junmai Daiginjo "Southern Beauty"
Not a fan of sweet sake? This affordable premium Daiginjo will change your mind. Layers of fruity, bright crispness with an elegant sweet touch. This is the bottle for wine lovers or dry sake fans to try when exploring Daiginjo.
Sohomare Tokubetsu Kimoto Junmai "Heart and Soul"
This is an elegant Kimoto Junmai with vanilla and lemon peel aromas. It has a perfect balance of earthy, nutty, and ricey flavors with a dry finish. It's great served chilled or at room temperature.
Best,
Zoe
