We welcome back to the True Sake tasting counter Jackie Yen from Perfect Pairing Trading. What is Taiun Sake? Taiun Sake is made by Chen-san, the first Taiwanese born Master Brewer based out of Shimane Prefecture. He is making lots of fun sake expressions right now that are unlike anything you've ever had. His Yamahai Junmai Ginjo is a dynamic food pairing superstar. He also revitalized a Taiwanese rice variety called Taichun 65 (which has nothing to do with polishing btw) and showcases this rice in his Kijoshu and his 90% polished Junmai. If you missed the last time Jackie was showcasing Taiun Sake, then you most certainly don't want to miss this.

We welcome back to the True Sake tasting counter Sake Specialist Alex Bemis from Mutual Trading. Despite not locking down Valentine's Day for his tasting, Alex clearly feels the love in the air. He will be showcasing unique brews that slightly lean towards lovey-dovey, including the Oze Rose, the Nanbu Bijin Umeshu, and the limited edition Niwa no Uguisu Doburoku Pink. This tasting is highly recommended for those wanting to try unique brews, or for those that like something very easy to drink. You may also find yourself the perfect Valentine's Day gift for that special someone.

February 14th - East West Trading Tasting (Takeda Shuzo, Tsuchida Sake Brewery Co., Koyama Honke Shuzo, and Tamanohikari Sake Brewing) with Sake Legend Eduardo Dingler

We welcome back to the True Sake tasting counter Sake Legend and Napa's favorite son, Eduardo Dingler. On Valentine's Day, Edo-san will be showcasing a lot of fun sake including some classics and some brand new offerings too, including Katafune Tobin from Niigata, Tsuchida Shin from Gunma, Tengu Doburoku from Saitama, and Tama the Cat from Kyoto. This lineup is quite diverse, and will include something for everyone. This will be a great opportunity to also try some styles that you have been curious about. Come by and hang out with Eduardo and find out why he was voted "Best Dressed Man in Sake."

Making her debut at our True Sake tasting counter is friend of the shop, Mio Okura. We've known Mio Okura for a while now, and we've seen her make her mark in the sake world with various companies and ventures. Currently, she lends her vast expertise to the folks over at Heavensake. Heavensake may look a little less traditional than other sake labels, but the contents inside are unique and fascinating blends by legendary winemaker Regis Camus. You see, while Konishi, Dewazakura, and Urakasumi are established brands in their own right, Regis was granted the keys to the kingdom and full access to these breweries to make his own special blends using established flagship sake brews. Sake blending has been around for a long time now, but Mr. Camus is making his mark and pushing the boundaries of what sake can be. We're excited to have Mio-san guide us through their fun and dynamic portfolio.
