Zankyo translates to “Reverb” or “Vibration”


A masterpiece of sake brewing, the first sake made from rice polished to just 7% of its original size, made by continuously milling rice for over 10 days. (93% of each grain is milled away)


In 2009 Niizawa became the first brewery to achieve a sake made from rice polished below 10% remaining. Driven by the question of what flavors lay when using the very center of a grain of rice, they improved the polishing from 9% to 8% and finally the magic 7%. 


The world of sake was stunned by the results, supple and delicate, with a quiet energy and remarkably light flavors. Trusting that the general public would also find the results compelling, they released it to great acclaim and it is now one of the most awarded premium sake in the world.


Incredibly light and delicate structure, very fleeting textures, flavors and aromas that characterize the very best sake: always just beyond your reach.


It features a Citrus nose, like freshly expressed grapefruit peel and young pear tones.
