I dedicate this month’s Beau-Zone layer to Mr. Koichi Saura, who is not only the owner of Urakasumi, but also one of my sake heroes who I have striven to work harder to seek his approval. He might not know that, but I think he’s one of the smartest and most important people not only in the international sake sphere, but in the history of all sake. And our connections run deep. Koichi-san was the man who made me the first Sake Samurai, as he was the first President of the Young Sake Brewer’s Association who became the first President of the Sake Samurai. And since the Sake Samurai are coming to SAKE DAY this year I thought the tie-in was important. Also, Koichi-san has donated the Welcome Sake for SAKE DAY 2023 the first year that he attended SAKE DAY. 

 

And when I was on the stage in Kyoto receiving my Sake Samurai award and speaking with the media I promised, “To make sake so popular in the US and overseas, that one day younger Japanese would reclaim sake and make it more popular in Japan,” in a time when sake was very unpopular and considered an old man’s beverage. And look at today when I have been selling Urakasumi Junmai sake for 23 years at True Sake, and Koichi Saura once again will have a table at SAKE DAY’25 the 20th Anniversary, which will be visited by a large contingency of sake retailers from Japan who are looking to study SAKE DAY and replicate it in Japan, thus bringing back our efforts here to strengthen sake there! 

Urakasumi is part of the True Sake DNA and the DNA of SAKE DAY, and that is why you should try this brew again, or give it a try for the first time. It’s classic Junmai sake that is a three-temperature brew that is also a food-pairing monster. Give this Junmai a try and say hello to Koichi at SAKE DAY 2025 – he might become your hero too!
