The nose on this very limited and only bottled twice per year unpasteurized (nama) and undiluted (genshu) sake is a wide collection of persimmon, chive, celery, blueberry, cupcake frosting, milk, and yeasty aromas. Clean, crisp, smooth, medium-bodied, rich-light™, slippery, and elegant, this brew drinks bright and lively with lots of wine-like action that deserves a white wine glass. We love Kirinzan, and their prototypical Niigata clean and dry style is highlighted in this 3-D version of nama sake. There is a 17% ABV that is not noticeable, and a finish that is very quick and clean. Look for subtle fruit tones of white peach, dried apple, and young pear at first, to more caramel, dark chocolate, juniper, and vanilla flavors that intertwine with a gentle umami flicker. This is a very fun "wine-fans" sake that is extremely limited. The nose on this super limited seasonally released unpasteurized sake has a great collection of blueberry, lime, papaya, Sprite, Granny Smith apples, and spring onions aromas. This is a voluptuous and raw sake that speaks to those who like full-bodied flavors and feelings in a glass. Chewy, bright, viscous, round, and juicy, there is a flow on the palate that lets you know this sake is rice and water at its best. Look for pear, powdered sugar, pineapple, papaya, mint, cherry, rock sugar, and a hint of cucumber flavors that slide up and down on a bright and zesty flow. A wine glass brings forth the tingle and width of this brew.
