The nose on this sake that was made using cedar barrels from Akita Prefecture is a gentle collection of cedar, cream, and steamed rice aromas. When chilled, this sake drinks clean, smooth, round, dry, and very elegant. It's a really tasty woody brew that is extremely well balanced and very smart in the glass. The control and balance is very impressive. When at room temperature, the cedar bites and gets much more snappy and spicy. Look for creamy and savory flavors of cedar, cinnamon, and spices on a tingly flow. A reminder that you are drinking a cedar-aged sake that pulls all of that woody goodness. It is not overwhelming, but the strength of this Taru is when it is consumed chilled in a mid-sized glass.
