Kibo Junmai "Hope"
The nose on this sake with an incredible story is a gentle collection of steamed rice, forest floor, woody, and marshmallow elements. This sake is literally drinking a story! It is a very special brew that is round, clean, with a nice nougat finish. It has more body than most cup sake, and it is incredibly smooth. There are hints of rice sweetness, but the overall drinking experience is dry. It feels really good in the mouth as the texture is round, rich, chewy and very easy. And of course this can is filled with Hope! From the distributor: "The earthquake and tsunami of March 2011 completely destroyed Suisen Shuzo, the makers of Kibo Junmai, and tragically took the lives of seven of their employees. With much passion and perseverance, Suisen Shuzo was rebuilt and the company resumed sake production the following year. The spirit of Suisen Shuzo lives on in its Kibo Junmai."
